During your stay at La Cascina di Opaco you will have the chance of living Fausti Rosanna’s Farm that since 1860 dedicates itself to the growing of the properties located a few km from Norcia.
This passion has been handing down through generations, a witness of the changes that have affected rural agriculture through the years up to the present days, when quality and tradition are the aim of the farm.
Since 1998, the farm has been specializing in the production of typical Norcia’s products, such as: spelt and lentil.
Spelt is one of the oldest cereal that man has cultivated since Roman age. Today it is mainly used for the preparation of soups, salads and it represents an excellent ingredient for baking (spelt flour).
Spelt’s main feature is the antioxidant strong power given by the concentration of selenium and by the excellent action of vitamins and mineral salts. Lentil’s roots are ascribable to Neolithic. Lentil from our mountain is characterized by small dimensions and typical taste. It represents one of the base ingredients of Norcia’s gastronomy. It perfectly matches with our local production of sausages, “cotechino” large boiled pork sausage) and “zamponi” (pig’s trotter). |
